Gordon Ramsay Academy's Iced Tea

Published: 15/06/2023

A twist on a classic, this lemon and basil iced tea is perfect for warmer weather and easy to make at home. It's simple and super refreshing. We love to serve ours over ice with a sprig of basil and slices of lemon. To add your own twist, try with peaches, raspberries, or even blueberries!

INGREDIENTS

  • 2 green tea bags
  • ½ lemon, finely sliced, plus extra to serve
  • 2-3 sprigs of basil, leaves picked, plus extra to serve
  • 2 tsp sugar (to taste)
  • Ice cubes, to serve

METHOD

  1. Fill the kettle with water and bring it to the boil.
  2. Meanwhile, add the tea bags, lemon slices and basil to a heat-proof jug or container. Completely cover the ingredients with hot water then stir in the sugar.
  3. Allow to steep for 15 minutes, then remove the tea bags and stir again.
  4. Leave to cool, then seal and place in the fridge to chill completely. This will keep for 24 hours, or up to 5 days if you strain and remove the fresh ingredients.
  5. When ready to serve, fill 2 tall glasses (or 4 small tumblers) with ice cubes, pour over the iced tea and garnish with fresh lemon slices and basil leaves.
